Mondongo Colombiano is a traditional Colombian soup for customers who want something hearty and authentic. It freezes well, reheats gently, and is best served with rice, lime, and fresh herbs.

Soup tastes best thawed overnight, then warmed gently.
Heat in a covered saucepan on low heat until loosened. Stir, then continue heating until hot throughout.
Use defrost only to loosen the soup. Then heat in short bursts, stirring between each burst.
Do not thaw at room temperature. Heat until steaming hot throughout, ideally 74°C / 165°F.
